When using the USB-C Audio Adapter with your iPad, you will only be able to use the play/pause function on your earphones. This is due to the MFi protocol and restrictions of the USB-C port of the iPad. At this time, the USB-C port does not allow for any additional functions (such as volume up/down) due to these restrictions.
